TWD: Savory Brioche Pockets

Even though my mixer threatened to throw the buttery brioche dough, metal bowl and even itself, onto the floor of the kitchen, forcing me and Emma to hold the bowl in place, this Tuesdays with Dorie recipe was a winner.

Yes, my post is incredibly late. A lot has been going on in the past few weeks, including a week with Tom, two graduations and some family time.

But I made these savory pockets, stuffed with goat cheese, potatoes, caramelized onions and asparagus, back in early May, when Tom was here. The pockets became the main course before the rhubarb upside down cake. A wonderful spring dinner. Two are still hanging out in the freezer, and I’m hoping that they’ll make a good lunch reheated in the oven.
